01 — THE IDEA

You don’t need another recipe. You need the twenty minutes of technique nobody wrote down.

A recipe says sear the meat. It won’t tell you the pan is too crowded, that the sizzle went quiet, or that the brown stuff welded to the bottom is the best part of dinner. You learn that standing up, towel over your shoulder, next to somebody who has done it a thousand times.

Culinary Teaching LLC runs small classes out of a dedicated kitchen on Garst Street in Cabool. Everyone gets a station, a board and a knife. Nobody watches from a stool and nobody takes notes on a phone. If the drive or the evening doesn’t work, the same curriculum is filmed module by module and sitting online.

In the room, in Cabool

Evenings and weekend mornings. You cook the whole dish start to finish, then everyone sits down at the long table and eats it. Apron, knives, boards, ingredients and recipe cards are already at your station. Bring a bottle if you want one.

Seven things we drill until your hands know them cold.

01 / KNIFE

The grip before the cut

Pinch the blade, not the handle. Speed, even cuts and all ten fingers come out of that one boring adjustment.

02 / HEAT

Listening to the pan

A sear sings. Steam sighs. Cook by sound and smell and the timer turns into a suggestion.

03 / SALT

Season in layers

Salt at four moments, not one, and taste after every one. This habit fixes more home cooking than any recipe you’ve saved.

04 / DOUGH

Reading the window

Gluten is something you can see and feel. Stretch it toward the light and the dough tells you exactly how much longer it needs.

05 / FOND

The brown bits are dinner

Deglaze while the pan is still loud. Ninety seconds of scraping turns a plain chicken thigh into something worth the plate.

06 / FAT

Emulsion, on purpose

Butter into sauce, oil into yolk, pasta water into everything. Once it clicks you’ll never buy a bottled dressing again.

07 / TIMING

Everything hot at once

Work backwards from the plate. The hardest thing in any kitchen is not a cut. It’s a schedule.
